KDA_3_30212 On a shelf in the downstairs kitchen, there was a white, plastic food-grade bucket with a white powder substance and it was not labeled. The person in-charge said it was flour. KDA_3_50118A1 In the black refrigerator behind the front counter, there were two grilled cheese sandwiches dated Oct. 3-5 and two Lyle sandwiches dated Oct. 3-5. An employee said those were not the correct dates. He said the sandwiches were made on Nov 3. Corrected on-site, put the correct make-date on the sandwiches.

KDA_4_90312A Downstairs, there were exposed sewer pipelines and directly below them there was a rack with single use plastic cups, lids, spoons and parchment paper. The person in-charge said they only use the parchment paper. Corrected on-site, moved the parchment paper.

KDA_3_50116A2 “All cold holding units were checked and all foods were in compliance (unless otherwise noted in this report).” Freezers: All potentially hazardous food/temperature-controlled for safety are frozen. In the black Frigidaire refrigerator, there was an open cart of heavy whipping cream at 44 F. An employee used it around 11 a.m. to make caramel. He stated that it was out roughly around 10-15 seconds and placed back in the refrigerator. The temperature was taken around 1:05 p.m. The ambient air temperature of the unit was reading 40.3 F. Corrected on-site, discarded and adjusted the temperature gauge.

KDA_4_60211E4 Inside of the ice machine, there is mold buildup on the plastic ice deflector.

KDA_6_20215A3 The back exit door has a one-quarter inch gap at the bottom right corner. This could allow the entrance for pests.

3-501.17(B) In the black Frigidaire refrigerator, there were two bags of honey ham with an open/package date of Oct. 30. The person in-charge said that is the day the ham was bought and frozen. He said they were pulled to thaw on Nov. 7. Corrected on-site, put the thaw date on the bags.

KDA_3_40311D In the crock pot, there was tomato basil soup (made on-site) being reheated. The temperature was at 89 F around 9 a.m. An employee said he put the soup in the crock pot around 8 a.m. (less than two hours). Corrected on-site, rapidly reheated the soup on the stove top to 180 F by 9:45 a.m.

KDA_4_60111A On the rack above the three-compartment sink, there was a plastic six-quart container with oil residue inside and stored clean. Corrected on-site, placed in the ware-wash area. In a utensil drawer, there were two metal scoops with dried food debris on the food contact surface and stored clean. Corrected on-site, placed in the ware-wash area. The mixer had dried white powder on the machine and dried food debris on the metal frame where the whisk is inserted. An employee said it was not used today.

KDA_4_70211 At the espresso machine, they had a wet cloth laying on the drain tray. The employee said they use the wet cloth to wipe down the steam wand. The wand came into contact with milk to make an espresso. Corrected on-site, educated and the employee got a container of sanitizer.

KDA_5_20515B At the two-compartment sink located up front, water flow from the faucet is low.

KDA_3_50118A3 In the make-table, there was a squirt bottle of balsamic and oil dressing (made on-site) date-marked Oct. 27 to Nov. 25 and there was a metal container of honey and cream cheese (made on-site) dated-marked Oct. 26 to Nov. 24 (date-marked past seven days). Corrected on-site, discarded.

KDA_3_30211A1b In the True reach-in cooler, there were ready-to-eat/drink items (a half gallon of buttermilk, an open gallon of whole milk, two open containers of heavy cream and a plastic container of made on-site tomato soup) in between a box of raw bacon, a metal container with a roll of raw sausage and an open carton of raw hardshell eggs. Corrected on-site, rearranged the items; raw products on one side. (Note: No leakage detected.)

KDA_3_50115A On a speed rack, there were two metal sheet pans of cooked sausage at 94 F and 97 F cooling down at room temperature. An employee said they have been cooling down for 30 minutes and the temperature was taken around 9:25 a.m. Corrected on-site, placed the sausage in the True reach-in cooler.

KDA_5_20212A At the two-compartment sink located up front, the water temperature was reading 76 F.

KDA_3_10111 In the make-table, there was a Ziploc bag of sliced salami with an expiration date of Nov. 15. The opened date was unknown. Corrected on-site, discarded.

In the reach-in cooler (drive-through area), there was a plastic food-grade bag of sliced chicken with a prep date of Oct. 28 (held past seven days). Corrected on-site, discarded.

KDA_3_10111 Repeat Violation: In the make-table, there was an open container of hummus without a known date. In the glass display cooler, there was a metal food-grade pan of white lasagna without a known make-date. (Note: This product is made at the Aggieville location.) Corrected on-site, discarded.

KDA_3_50118A2 Repeat Violation: In the glass display cooler, there was a metal food-grade pan of red lasagna without a make-date. The person in-charge said the lasagna was made on Nov. 3 (past 24 hours). Corrected on-site, date-marked.

4-302.14 Repeat Violation: There were no quaternary ammonia test strips available during the inspection. (Note: The manager ordered some today.)
