KDA_4_60211E4 Inside of the cappuccino machine, there is dried food debris buildup in the dispensers.

KDA_7_20111B There was a working spray bottle of Expo White Board cleaner being stored on top of the ice machine (on the ledge). Corrected on-site, removed the chemical. (Note: No leakage detected.)

KDA_3_50116B “All cold holding units were checked and all foods were in compliance (unless otherwise noted in this report).” Freezers: Potentially hazardous food/temperature-controlled for safety are frozen. On a black cart, there were two cartons of raw, hardshell eggs at 70.9 F, 67.8 F, 65.4 F and 69.3 F. The person in charge said the eggs were left out since 8 a.m. and the temperatures were taken around 9:20 a.m. (less than four hours). Corrected on-site, placed them in a reach-in cooler.

KDA_3_50118A1 In a reach-in cooler, there was a plastic food-grade container of individually wrapped sliced ham with a prep date of Nov. 1 (held past seven days). In the walk-in cooler, there was a container of mashed potatoes (made on-site) with a make-date of Oct. 25 (held past seven days). Corrected on-site, discarded both items.

KDA_4_60111A On the rack above the reach-in cooler (located in the back), there were eight plastic food-grade containers with labels on them and stacked clean (can hold bacteria). Corrected on-site, removed the labels and washed and sanitized the containers.

KDA_6_50111 There are four stained ceiling tiles. (Note: The person in-charge said there have been no roof leaks.)

KDA_3_30511A1 There was an open carton of cupcakes being stored directly next to the hand sink (potential for soap and water to splash onto the product). Corrected on-site, closed the carton.

There were also packages of peanut brittle, star packages (clusters, creams, toffee and truffles), Halloween packages (Oreos, malt balls and Nutter Butters), Burgundy & Gold Box (assorted chocolates, hazel pops and truffles), mini, small and medium platters (truffles, clusters, creams and blueberries/cherries), Classic Basket (assorted chocolate, hazel pops and yogurt pretzels), Flower Pot Box, Mini Martini, Sugar Free Box, Truffle Box, Assorted Nut Clusters, chocolate-covered pretzels, chocolate bing cherries, chocolate raisins, rice crispy treats, caramel brownies, mummy Oreos and ghost Nutter Butters without a list of ingredients on the packages. On the counter, there were packages of Penuche, pumpkin and walnut fudge without a list of ingredients on the packages. Corrected on-site, put a label on them.

KDA_3_60211B5 On the counter, there were Pecan Divinity gourmet chocolates and peanut brittle without a food allergy label on the packages. KDA_4_90411A On the rack above the three-compartment sink, there was a plastic ice cream bucket with plastic spoons and metal beaters facing upward. (Note: Need to invert so handles are facing upward.)

KDA_7_10211 On top of the large mixer (not in use anymore), there were two working spray bottles. One had blue liquid and the other had clear liquid and both were not labeled. The person in charge said one was Windex and the other one was bleach water. Corrected on-site, labeled both bottles.

KDA_4_30212A There was no food thermometer available during the inspection. (Note: Cook raw eggs in the cake pops and cook raw bacon-dipped in chocolate.)

KDA_3_30511A1 Below a rack, there was one box of Mochi Sweet Rice Cakes being stored directly on the floor and near a floor drain. Corrected on-site, removed the box off of the floor.

KDA_7_10211 Below the front counter, there were two spray bottles with a pale yellow liquid in them and they were not labeled. The person in charge said it was sanitizer. Corrected on-site, labeled the bottles.


4-302.14 There were no chlorine test strips available during the inspection.

KDA_3_30412B In the small reach-in freezer, there was a green plastic cup (without a handle) being stored in direct contact with cookie dough balls. In the M3 Turbo Air reach-in cooler, there was a clear plastic cup (without a handle) and a orange plastic cup (without a handle) being stored in direct contact with the mint chocolate chips and the chocolate chips. Corrected on-site, removed the cups.

KDA_4_70211 The three-compartment sink was set up and in use. It utilizes chlorine for sanitization and the concentration was at zero parts per million. Inspector primed the chemical dispenser (there was air in the line) and now the concentration is at 25 ppm. The person in charge added extra chlorine to the water solution, making the concentration 50 ppm.

KDA_4_60213 The metal trays that the yogurt machines sit on have dried, sticky food debris buildup on them (this can attract pests).

KDA_3_50116A2 In one of the yogurt machines, there was Snickerdoodle yogurt mix (mos) with an internal temperature at 44-45 F (top liquid mix). The yogurt mix was made last night (held above 41 for more than four hours). Corrected on-site, discarded. (Note: The product at the bottom was 41 F or below. The employees rotate the liquid yogurt mixtures every two hours.) In the M3 Turbo Air reach-in cooler, there was a plastic food-grade container with Snickerdoodle yogurt mix (mos) with an internal temperature at 44 F. The person in charge said it was made last night (held above 41 F for more than four hours). The ambient air temperature of the unit was reading 33 F. Corrected on-site, discarded.

KDA_4_50111A Yogurt unit No. 2 is out of order.

KDA_6_20215A3 The back exit door has a one-half-inch gap at the bottle right corner. This could allow the entrance for pests.
