Corrected on site, educated person in charge about storing raw fish above other raw proteins because of the allergen. Person in charge moved the raw chicken to the bottom shelf and moved the raw shrimp to the bottom shelf with a separation between both.

Corrected on site, item was reheat to 167 F. There was a pan of crab rangoon on buffet-3 that had a internal temperature of 129.6 F. Person in charge stated it was placed on the buffet about one hour ago. Corrected on site, item was reheated to 176 F.

7-201.11(A) There was a working spray bottle of degreaser and a open gallon of dish soap being stored on a metal gas pipe which sits right next to an open flame on the wok stove area. Corrected on site, chemicals were removed.

3-501.15(A) There were five pans of cooked chicken breast stored on a speed rack in the back kitchen. There was no type of cooling method being used. Person in charge stated they were placed there about 30 minutes ago. The chicken was placed on ice.
