There was a plastic container of cooked corn with an internal temperature of 44.5 F, also made on Feb. 9 for dinner. There was a plastic container of cooked mixed vegetables with an internal temperature of 45.2 F and made on Feb. 8. A plastic container of cooked rice with an internal temperature of 51.3 F made on Feb. 5 and a plastic container of fries with an internal temperature of 46.3 F made on Feb. 9. The ambient temperature of the unit was 39.2 F. Corrected on site: all items discarded.
3-501.18(A)(2) In the Maximum reach-in cooler, there were also three packages of deli meats (roast beef, turkey and ham) opened and without a date. The president of the house said they were opened on Feb. 8. Corrected on site: items date marked.

Notes: One of the boys in the house was frying a hamburger on the stove and a grease fire started due to the grease trap being full. He thought the temperature knob was turned off but it was left on high. There was smoke damage but no extensive fire damage. They used 10 pounds of dry chemical spray to put the grease fire out.
The food contact surfaces, dishes, etc. will need to be cleaned. A chemical cleaning crew was called to clean up the chemical residue. All food sitting out on the counters and in the reach-in coolers opened was discarded.

At the dry utensil storage rack, there were 13 medium plastic lids with broken edges, seven square plastic containers with cracks in the containers and on the edges, one small plastic container that was cracked, six green lids with broken/melted edges and four large plastic lids with broken edges. Corrected on site: discarded all broken containers and lids.
