KDA_4_60111A On the utensil rack, there were two round, plastic bowls, one red and one blue, with food debris left on them and stored clean. Corrected on-site, moved to the ware-wash area. This was only two of the over 25 food-grade containers, less than 10 percent.

KDA_5_20212A The water at the hand sink located at the ware-wash area was 95 degrees. The hot water tank was serviced today during the inspection. The pressure switch on the hot water tank was stuck and needs to be replaced. Corrected on-site, after it was serviced there was 100 degree water at all of the hand sinks and 110 degree water at the three-compartment sink. The repair man said it started out at 78 degrees and now it is set and cycling at 120 degrees. The pressure switch has been ordered and will arrive on Feb. 17.

KDA_7_10211 Below the hand sink near the reach-in fridge, there were three working spray bottles with blue, green and pink liquid not labeled. An employee said one was glass cleaner and the other two were degreasers. Corrected on-site, labeled all of the spray bottles. Behind the front counter, there was a blue plastic bucket with clear liquid not labeled. An employee said it was Comet with bleach. Corrected on-site, labeled the bucket.

KDA_3_50118A2 In the walk-in cooler, there was a metal sheet pan of chili rellenos without a date. An employee said they were made on Feb. 14. Corrected on-site, dated the item. In the Saturn reach-in cooler, there was a large metal food-grade pan of shredded beef without a date. An employee said it was made on Feb. 14. Corrected on-site, dated the item.

KDA_3_50116A1 On the steam well in a metal food-grade pan, there was salsa verde made on-site at 123.8 degrees. It was placed on the unit around 11 a.m. and tempted around 12:50 p.m. Corrected on-site, reheated.

KDA_3_30211A1b In the walk-in cooler, there was one case and three open cartons of raw hard-shell eggs being stored directly above three jugs of ready-to-eat margarine. Corrected on-site, removed the eggs.

KDA_3_50118A3 In the walk-in cooler, there was a metal food-grade pan of refried beans dated Feb. 8-17, past seven days. An employee said they were made on Feb. 12. Corrected on-site, put the correct date.

KDA_3_10111 In the Pepsi reach-in cooler at the waitress station, there was one aluminum container with flan made on-site without a known date. Corrected on-site, discarded.

KDA_3_50116A2 In make table two, there was a metal food-grade pan of chili rellenos at 49.1 degrees. The lid to the make table was left open during the lunch rush. The ambient air temperature of the unit was reading 37.5 degrees. Corrected on-site, placed the chili rellenos in the walk-in cooler.

KDA_4_20211A2 In the Hobart reach-in cooler, there were two large plastic food-grade containers with broken edges being used to store sliced green peppers and sliced tomatoes. On the lower shelf across from the mechanical dish machine, there was one rubber spatula with a chip on the corner. Corrected on-site, trimmed smooth.

On the utensil rack, there was one metal produce slicer with dried food debris on the blades and stored clean. There was also one metal food-grade pan with dried food debris left on the outside and stored clean. Corrected on-site, moved all of the items to the ware-wash area.
