They pull the cloths from a sanitizer bucket but don’t always keep them stored in the solution. Corrected on site, placed a sanitizer bucket in the bakery area and it utilizes Quaternary Ammonia and it measured at 200 ppm.

KDA_3_50116A2 In the bakery area on the counter, there was a carton of raw, hard shell eggs at 70 degrees and were tempted around 8:40 a.m. An employee said they have been out for an hour. Corrected on site, used them quickly. In True reach-in cooler one, there was a container of heavy cream at 50.5 degrees. An employee said it was out for about 20 minutes. The ambient air temperature of the unit is reading 29.9 degrees. Corrected on site, left the creamer in the unit to cool down. In the Avantco RIC, there was a squirt bottle of yogurt at 45.7 degrees. The unit doors have been opened and closed due to orders. The ambient air temperature of the unit was reading 43.2 degrees. The person in charge adjusted the temperature gauge and now it is reading 41 degrees.

On the utensil rack above the salad unit, there was one ceramic bowl with dried food debris on the rim and stored clean. Below the salad unit, there was one squirt bottle with tape and sticky residue left on it and stored clean. Corrected on site, moved all of the items to the ware-wash area.

KDA_6_50111 The base board below the mechanical dish machine is torn away from the wall.

KDA_3_50114A2 In the walk-in cooler, there was a large metal food-grade bowl of burrito mix (mos) (eggs, potatoes and bacon) made on March 3 and it tempted at 45.6 degrees around 10:50 a.m. on March 4. It was not able to cool down to 41 degrees within six hours. Corrected on site, discarded. The ambient air temperature of the unit was reading 35.1 degrees. In the True reach-in cooler two, there was Tomato Florentine soup at 55.1 degrees and 43.4 degrees and made on March 1, buffalo chicken chili at 63.2 degrees and made on March 3, gravy at 54.1 degrees, 54.2 degrees, 53 degrees and made on March 3, marinara sauce at 44.2 degrees and made on March 1, Alfredo sauce at 47.8 degrees and made on March 1, ground beef sausage mix at 46.8 degrees and made on March 1. These items are made on site. The ambient air temperature of the unit was reading 38.7 degrees. The air flow in the unit was blocked and they put the hot items in the unit straight from the steam table. The products were not able to cool down to 41 degrees within six hours. Corrected on site, discarded.

KDA_4_70211 The mechanical dish machine was in use; it utilizes chlorine and it measured at 0 ppm. The person in charge primed the machine and it was still measuring at 0 ppm. (Note: going to set up a sanitizer compartment at the three-vat sink).

KDA_5_20515B The two-compartment food-prep sink faucet drips water when the water is shut off.
