KDA_6_20215A3 The back exit door has a 1/4-inch gap along the bottom. The weather strip was removed so they could fit their new freezer unit through the door. (Note: They plan to place it back on).

KDA_6_50111 The wall located in the mop sink area is peeling away, and there is a gap that provides harborage for pests. The wooden cabinets in the dining area are broken. The dining tables have broken legs to where the tables are not leveled.

On a shelf, there were four round, white plastic lids with tape left on them and stored clean. Corrected on-site, cleaned the mixer and moved all of the other items to the ware-wash area.

KDA_4_60111A In the lower cabinets in the kitchen, there were three red plastic lids, one clear plastic lid, one clear plastic food-grade container and one plastic food-grade Rubbermaid container with stickers and day dots left on them and stored clean. Corrected on-site, set aside in the ware-wash area.

KDA_4_90311B In the upper cabinets in the ware-wash area, there were four plastic drink pitchers stacked wet and clean. There were also eight plastic cups stacked wet and clean. They are not able to properly air dry. On the shelf below the metal food-prep table, there were 14 metal sheet pans, 13 metal food-grade pans, metal pots, bowls and strainers all facing upward. Food debris can splash on them since they are near the fryer.

KDA_6_50111 There are three areas throughout the kitchen and the employee restroom where floor tiles are missing. There is a 1/2-inch gap on the floor where the floor tiles are missing.

4-302.14 There were no chlorine test strips available at the time of the inspection. Corrected on-site, left chlorine test strips.

KDA_3_30511A1 In the dry-food storage area, there was one box of croutons and one box of Pop-Tarts being stored directly on the floor.

The cook said it has been in the unit since 6 a.m. and its temperature was taken around 10:45 a.m., more than four hours. Corrected on-site, discarded. There was also sliced ham at 59.9 degrees, sliced turkey at 58.7 degrees and sliced cheddar cheese at 59.8 degrees. The cook said he set them out around 10-10:15 a.m. and the temperature was taken around 10:45 a.m., less than four hours. Corrected on-site, placed in the True reach-in cooler. The cook did not turn the buffet cooler on until 10:45 a.m. The unit is reading 36.9 degrees.

KDA_6_50112A There is soiled residue on the water handles at the hand sink located in the ware-wash area. There is minor grease buildup on the floor below the fryer. There is food debris on the floor in the corner and near the floor drain in the ware-wash area and a fowl smell. There is pink and black mold on the caulking seal above the dump sink in the ware-wash area. There is dust on the ceiling vents in the kitchen.

KDA_3_50115A On the buffet cooler, there were three cooked chicken breasts at 63.9 degrees. The cook said he cooked them around 6-7 a.m. and placed them in the unit. The unit was turned off until 10:45 a.m. The chicken breasts were cooling at room temperature for more than three hours with no cooling method being used. Corrected on-site, discarded.

KDA_6_20211A In the dry storage room, the two light fixtures do not have protective coverings.

In a utensil drawer to the left of the dirty-dish window, there were metal measuring spoons and a metal measuring cup with a white substance left on them and stored clean. Corrected on-site, moved to the ware-wash area. On an upper shelf, there was one clear plastic lid with a sticker label left on it, a round plastic lid with a sticker label left on it and two blue plastic rectangle lids with dried food debris on them and stored clean. Corrected on-site, moved to the ware-wash area.

KDA_5_20515B The hot water handle located at the hand sink in the kitchen is stripped and does not allow the water to shut off. At the mop sink, the hot and cold water handles drip water when the water is shut off and turned on. At the three-compartment sink, the left faucet spout is lose and drips water when the water is shut off.

KDA_3_30412E The metal ice scoop was being stored directly on top of the ice machine. The top of the ice machine was soiled with dust and food debris. Corrected on-site, placed the scoop in a clean container.

Corrected on-site, labeled the container. On a wire rack, there was a spray bottle with pink liquid in it and not labeled. The chef said it was sanitizer for the tables. Corrected on-site, dumped the bottle due to the spray nozzle being broken.

KDA_5_10311B There was no hot water available at the hand sink located in the kitchen. The hot water valve was turned off due to the hot water handle being stripped and the water leaks. Corrected on-site, turned the hot water valve back on and is allowing a slow drip until it can be fixed.

KDA_6_30114 There is no hand-washing sign by the hand sink or in the employee restroom. Corrected on-site, left two hand-washing stickers.

KDA_3_50115A There was a large metal food-grade pan with cooked pork roasts cooling down on the counter at room temperature. The chef said she placed them out on the counter to cool down around 9 a.m., about 20 minutes. Corrected on-site, placed back in the oven to hot-hold. (Note: The pork roasts were at 181.6 degrees around 9:29 a.m.). Also educated about utilizing ice baths to help cool down products or placing it in the freezer or cooler.

KDA_4_50111B The middle and right door gaskets on the True reach-in cooler are torn. This does not provide a good seal.

KDA_6_50112A There is mold on the caulk in between the wall and the metal frame to the mechanical dish machine. There is dust buildup on the vent above the mechanical dish machine. There are eight dead cockroaches in the lower cabinet below the window.
