The person in charge said she just moved it from the breading station cooler and placed it in the make table around 11:10 a.m. An employee said the chicken was placed in the breading station around 10 a.m. The chicken was held below 41 F for less than four hours. The ambient air temperature of the breading station was reading 34.7 F and the ambient air temperature of the make table was reading 35.6 F.

The person in charge said they do not use the sink and they will be moving the location of the hand sink and the three-compartment sink. KDA_5_20314 At the service sink, there was a Y-shut-off valve installed downstream of the atmospheric vacuum breaker. A chemical dispenser hose and a green water hose were attached to the Y-shut-off valve. The end of the green hose was below the flood rim of the basin. Corrected on-site, inspector educated and the person in charge disconnected the hose.
