KDA_5_20212A The hand sink located up front was reading 70.6 F. The hot water valve was shut off. Corrected on-site, the person in charge turned the hot water valve back on and it is reading 100 F-plus. The hand sink located in the food truck was reading 75 F.

KDA_6_20215A3 The front entrance door has a 1/2-inch gap toward the bottom. This could allow the entrance for pests.

KDA_3_40311A On the steam well, there was chili (made on-site) at 127.6 F. The cook said he reheated the chili in the oven to 145 F. Corrected on-site, reheated the chili to 165 F.

Corrected on-site, placed it back in a reach-in cooler. There were also plastic containers of hard-boiled eggs (shells off) at 45.3 F and diced chicken at 45.3 F. One of the cooks said they were set out around 10:30 a.m. and the temperatures were taken around 11:30 a.m. (held above 41 F for less than four hours). Corrected on-site, consumed quickly for lunch (11 a.m. to 1 p.m.). (Note: The ambient air temperature of the unit was reading 39.2 F.) On top of the steam table, there was a large metal bowl of potato salad (made on-site) at 46.2 F. There was no ice to help keep the product cold. One of the cooks said it was set out around 10:30 a.m. and the temperature was taken around 11:30 a.m. (held above 41 F for less than four hours). Corrected on-site, put the potato salad in small containers and submerged them in ice. On a cart in the kitchen, there was a basket of cream cheese packets. One packet had an internal temperature of 69.4 F. One of the cooks was not sure how long they have been out. Corrected on-site, discarded.

KDA_4_60111A In a lower cabinet, there was a white, plastic food-grade container with plastic wrap still attached to the edge of the container. There was also a plastic food-grade container with a cardboard insert inside of the lid. Corrected on-site, discarded the white plastic container and removed the cardboard insert.

Below the metal food-prep table, there were large metal sheet pans with black buildup on the edges. Corrected on-site, moved the items to the ware-wash area.
