Reason: Routine

Result: Out of compliance

Inspector comments: All cold holding units were checked, and all food is in compliance. Concentration of the chlorine sanitizer solution in the warewashing machine is between 50 and 100 parts per million. Discussed cooling food from 135 degrees Fahrenheit to 70 degrees Fahrenheit within two hours, and from 70 degrees Fahrenheit to 41 degrees Fahrenheit within four additional hours. Discussed illnesses that require reporting and symptoms that require exclusion from working with food. Discussed that employees may not return to work until at least 24 hours after symptoms have stopped. Paints and other materials left over from the recent remodel were stored in the back closet, along with assorted juices and foam cups. Although the chemicals were not stored over or in contact with food or single-use items, discussed keeping these items separate to prevent possible future contamination. Person in charge moved the cups and juices to the food storage shelves. Provided a temporary handwashing reminder sign for the kitchen sink.

3-101.11 There is a container of unkown yellow, solidified liquid on the counter next to the microwave. Person in charge said the liquid was garlic butter but was unsure whether liquid was real butter, margarine or oil. Corrected on-site: person in charge discarded liquid.

3-302.11(A)(1)(b) In the bottom of the kitchen reach-in cooler, a box of raw chicken in plastic overwrap is stored in contact with open containers of orange juice, tea and ranch dressing. Open containers of orange juice and barbecue sauce were stored on top of the package of raw chicken. Corrected on-site: person in charge rearranged cooler with the sauces and dressings stored on shelves above the raw chicken.

3-501.17(A) In the back reach-in cooler, a container of gravy was not date-marked. Person in charge said gravy was from Sunday, Jan. 28. Corrected on-site: person in charge date-marked gravy.

4-601.11(A) The door seal of the milk dispenser is soiled with grease or food residue. Corrected on-site: one of the house residents cleaned the seal during the inspection.

7-102.11 In the chemical storage area, a container of unknown blue liquid was not labeled with the name of the contents. Corrected on-site: person in charge identified cleaner as glass cleaner and labeled bottle. In the serving area, a spray bottle of unknown clear liquid identified by person in charge as multi-purpose cleaner was labeled “glass cleaner.” Corrected on-site: person in charge corrected bottle labeling.

7-201.11(B) In the back storage area, a spray bottle of stainless steel cleaner and polish was stored over a steam pot liner. Corrected on-site: person in charge moved the stainless steel cleaner and polish to the chemical shelf and cleaned the steam pot. In the serving area, a spray bottle of unknown clear liquid was stored on a wire shelf over a food prep table. Corrected on-site: person in charge moved the spray bottle to the back chemical shelf.

7-202.12(A)(2) Two pesticides, “Spider Killer” (EPA Reg. No. 149-18) and “Outdoor Fogger” (EPA Reg. No. 4822-573), that are not approved for use in a food establishment are stored in the back storage closet. Corrected on-site: person in charge removed the pesticides from the food establishment.

7-201.11(A) On the counter to the right of the dish machine, there was a spray bottle of all-purpose cleaner that had the nozzle pointing at a plastic lid. Corrected on site: lid was placed at mechanical dish machine.

3-501.18(A)(1) In the kitchen, in the stainless steel reach in, there was an open package of ham that had a date mark of Dec. 15. Corrected on-site: ham was voluntarily discarded.

4-601.11(A) In the kitchen, there were five plastic containers that were stored as clean with dried-on food debris. Corrected on-site: containers were placed at the mechanical dish machine.

4-602.12(B) In the dining hall, the microwave has an accumulation of debris on the inside. Person in charge did not know when it was last cleaned.

7-102.11 In the room with the milk machine, there was a spray bottle with a pink liquid in it that was without a common name. Person in charge did not know what it was. Corrected on-site: liquid was discarded.

7-201.11(B) In the warewashing area, there were two containers of liquid dish soap with lids on them, one container of liquid soap with no lid and a container of glass cleaner without a lid that were sitting on top of the dish machine. The dish machine was not in use. Corrected on-site: all containers were placed on the floor.
